Yields 10 people

To make the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Drink (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Put all the components into a saucepan, heat until it reaches a simmer, mixing until the sugar dissolves. Then, turn off the stove and leave to reach room temperature completely. Transfer into an sterilised bottle, close it and refrigerate it chilled, it will last for about four weeks.

For the Batch Mix: Mix the specified spirits and syrup into a big jug, let it rest for 60 minutes, then strain best through cheesecloth, so it's completely strained.

To serve: Add 85ml from the cocktail base into your mixing glass filled with ice, gently stirring lightly for one minute to cool it down. Pour into a frosted cocktail glass or equivalent, top with a few cranberries adding the final touch using a light spray with the mandarin essence over the top.
